Sous-vide (/su??vi?d/; French for 'under vacuum') is cooking technique that many people don’t understand and think it’s too difficult to try. As part of 30 days of Innovation, Patrick Browne, former UM Executive Chef, will demonstrate and demystify this technique, showing how easy and useful it is. He will demonstrate and explain how it can simplify meal preparation while giving you better results than traditional methods.
